These are foods that are apparently so delicious that people become addicted to them, and that are so dangerous to our health that they need to be tightly regulated, like cigarettes or other drugs. Experts have called for “urgent action” on regulating UPFs.
The second category is “processed culinary ingredients”, and it includes products that are made from the items in category one – so if you squeeze olives to produce oil, you’re going from category one to two. Then there’s category four, “ultra-processed foods”. The processing methods used here are much more modern ones: they involve industrial-level food production: anything that includes E-number food additives, artificial colourings, flavourings, emulsifiers, thickeners, or carbonation probably counts as ultra-processed.
