The dad-of-five wants to better himself by opening his own restaurant
On a grey rainy day, Nottingham needs a place like PNKS Bistro Lounge to bring a splash of colour to the city. The countdown to opening has begun, with Nottinghamshire Live being given a sneak peek of what the new eatery has to offer.
The American-style menu will have pink buns for the smash burgers. Signature beef short ribs will be served, along with brisket, Louisiana fried chicken burgers, mac 'n' cheese, loaded fries and tater tots. "It's been quite a long exciting journey. I have always wanted my own place," said Ash, who bit the bullet to quit his job to become his own boss.
"Initially when I first started at Wagamama there was always opportunity but after 10 years when you're still a sous chef you know you're not going to get anywhere so I thought I know myself, I know food very well and I know I can make it work."Ash began his cheffing career around 16 years ago Greene King pub, the Corn Mill in Chilwell, while he was still at college. Most recently he has been in the kitchen at The Playwright in Shakespeare Street.
