Refurbishment of a former Chinese eatery is underway to create an upmarket fried chicken restaurant. Michelin-starred chef Alex Bond is behind the new venture called Mollis.

Work is underway at the Derby Road site, conveniently located next to his fine dining restaurant Alchemilla, which serves tasting menus for discerning diners. As the plans begin to take shape proposals have been submitted to Nottingham City Council for changes to the building, which lies within Canning Circus Conservation Area.

The property was previously One More, a Chinese restaurant, which was formed using basement level space fronting Derby Road at street level. The application outlines plans to keep the existing building in its current state with internal partition wall alterations.Changes are also planned outside, including two new glazed windows and a new main entrance - both finished in dark grey - plus new signage. A heritage statement concluded that it would be in keeping with the conservation area.

It said: "The importance of the setting of the application within the conservation area is recognised. The site involves minor alterations to the street scene to allow for the existing ‘One More’ restaurant to be utilized and a new business to be launched on site. The development will have no material impact on the conservation area."

The estimated opening date of Mollis is November. As well as high-end fried chicken, there will be soft serve ice cream, plus cocktails, craft beers and natural wines.
