This new canal-side cocktail spot is all about the drinks...and the location
It's cocktail hour on a warm afternoon at New Islington Marina. There's a clear buzz about the place, with couples propped up against each other taking a nap in the sun, while friends dangle their legs over the edge of the canal, and diners tuck into some small plates outside the wine bar.
“I’m from Collyhurst and we’ve lived in Ancoats all our adult lives and we would always walk past, but one day we thought it would be great if there was a cocktail bar there and we just looked at each other and said 'shall we?' - this was nine weeks ago,” grins Liam, wearing a slick, salmon pink suit picked out especially for opening night.
“He couldn’t be here, but we did put some of his ashes beneath the bar. I was going to put him in front of the toilet but my mum wasn’t too happy about that. Life is too short, if you have ideas, just go for it, roll the dice.” But just over a year after their appearance on the BBC show, the pandemic hit. Overnight, their business lost 80 per cent of its revenue, as bars and restaurants across the country were forced to close. Liam was approached by the Mayor's office and then Nighttime Economy Advisor Sacha Lord, who said the NHS was struggling to get hand sanitiser and thought that maybe the duo could make some.
The bar itself is pared back, but it’s all about the details. While there’s a stunning wraparound terrazzo countertop, draped greenery, and marble-top tables, it’s purposefully minimal, intended to let the waterside views and cocktails do the talking. While Amy was adamant about having an Aviation cocktail on the menu - “I judge a bar by how good they make one” she says - the rest has been led by their all-star bar team. Take the Cherry Bomb for example, which blends Roku gin, cherry wine, Szechuan syrup, electric bitters and egg whites. It's a tangy, sour and aromatic concoction nodding to the seasonality of cherries right now.
