I will absolutely be making sushi again at home

For those that don't know I am a French classically trained chef, I went to culinary school before university with dreams of being the next Marco Pierre White or Raymond Blanc.

The course began with a speech from the head chef and teacher of the class telling us all about sushi and the origin of the food.

We each had a rolling mat, some rice and ingredients that were given to us by the teacher. We made a range of sushi rolls, including Maki - the most simple, a hand roll - which is like a sushi wrap and we made California rolls - which are a little more tricky. The hand roll was easier, it was just like folding a burrito or fajita, then the California rolls were the hardest. These just had a few more steps but I think it's safe to say that the fruits of my sushi labours were pretty impressive.
